So now the ski is starting but goes straight up to the limiter and then stalls.

Ill have the carbs completely closed start the ski and it goes straight to limiter before stalling due to lack of air and fuel.

What the hell is going on? any ideas?

So best to check the exhaust manifold and intake manifold?

it'll be somewhere along the intake tract...leaking pulse line(s), throttle shafts, carb bases, intake manifold, crank seals, crank case sealant, or base gasket.

Is there any way that it could be electrical?

sounds to me like what knoxie said about an air leak, check the pulse pump air line, down the back of the motor by the manifold, check it is connected at both ends and not split.
